Ingredients Required for Sour Kibbeh:
750 g pieces of meat
1.5 cups chickpeas
1 tablespoon tomato paste
3-4 cloves of garlic
1 tablespoon pepper paste
juice of 2 lemons
enough water
For the meatballs:
1/2 kg lean ground meat
1/2 kg simit (fine bulgur)
2 medium sized onions
1 teaspoon of salt
1 teaspoon black pepper
1 teaspoon red pepper
a tea glass of oil
1 teaspoon of mint
How to make Sour Small Meatballs:
The simit is first moistened a little with water. Onions are chopped into small pieces. Add black pepper, red pepper and salt and knead well. (15-20 minutes) Add minced meat and knead until the meatballs become soft. Tear off marble-sized pieces from the meatballs and roll them in your palms. On the other hand, chickpeas and meat, soaked overnight, are roasted with chopped onion. Add tomato paste and sour. Boil for 2-3 minutes. Add some salt to the boiling water in a separate pot and boil the rolled Kibbeh in this water until they are cooked. The water of the cooked meatballs is drained. When serving, the meatballs are placed in the meat and chickpea mixture, heated a little, and heated oil and mint are poured over them.
